  • 1 cup dry white wine










  • 1/3 cup white wine vinegar










  • 1 eschalot, finely chopped










  • 250g butter, cut into 1.5cm cubes

  • Combine wine, vinegar and eschalot in a saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer for 10 minutes or until liquid has reduced to 2 tablespoons.





  • Reduce heat to low. Add 3 cubes butter. Whisk until almost melted. Repeat with remaining butter, 3 cubes at a time. Remove from heat. Season with salt and pepper.
