Ground hazelnuts give a nutty twist to these crunchy macaroons which are crowned with drizzles of melted chocolate.

Ingredients:

  • 2 cups hazelnut meal (ground hazelnuts)










  • 1 cup caster sugar










  • 2 eggwhites










  • 1 tsp vanilla essence










  • 100g dark chocolate, melted

  • Preheat oven to 180°C. Line 2 baking trays with baking paper.





  • Place hazelnut meal, sugar, eggwhites and vanilla in a food processor and process for 1 to 2 minutes or until a thick paste forms.





  • Using your hands, roll tablespoonfuls of mixture into balls. Place on trays, allowing room for spreading. Using a spatula, flatten each macaroon slightly. Bake for 15 minutes or until macaroons are light golden. Allow to cool on trays for 5 minutes before transferring to a wire rack to cool completely.





  • Spoon melted chocolate into a snaplock bag. Snip off 1 corner and drizzle chocolate over macaroons. Allow to set before serving.
