These tender croissants are sweet and light with a slight almond crunch.

Ingredients:



8 Ingredients












  • 75g butter, at room temperature










  • 1 cup almond meal










  • 1/4 cup icing sugar










  • 2 tbsp plain flour










  • 1 tsp vanilla essence










  • 1/2 cups flaked almonds










  • 4 Coles Bakery Croissants, split lengthways










  • Icing sugar, for dusting

  • Preheat oven to 180C or 160C fan-forced. Line a baking tray with baking paper. Lay croissants on prepared tray and bake for 5 mins.





  • Meanwhile, place butter, almond meal, icing sugar, flour and vanilla essence in a food processor. Process until a smooth paste forms.





  • Open out each croissant flat. Spread 1 tablespoon of mixture over centre of each croissant. Close to sandwich together. Spread another 1 teaspoon of paste over top and sprinkle with flaked almonds. Bake for another 5-10 mins, until golden. Dust with icing sugar to serve.
