Ingredients:

  • 2 egg yolks










  • 2 cloves garlic, crushed










  • 125ml ( 1/2 cup) vegetable oil










  • 125ml ( 1/2 cup) olive oil










  • 2 tbsp fish broth (reserved) or water










  • 1 pinch cayenne pepper










  • 3 tsp tomato paste









  • Select all ingredients

  • Process egg yolks and garlic in a food processor until combined. With motor running, add half the combined oils, drop by drop at first, then in a thin stream until thick and emulsified. Add 1 tablespoon reserved broth.





  • Add remaining oils in a thin steady stream until emulsified. Season with salt. Add remaining 1 tablespoon broth, cayenne and tomato paste, and process to combine
