This easy microwave cauliflower bake is finished under the grill to create a crunchy cheese topping.

  • Melted butter, to grease










  • 20g (1 tbsp) butter, extra










  • 60g (1 cup) fresh breadcrumbs










  • 1 tbsp chopped fresh continental parsley










  • 1.3kg cauliflower, outer leaves removed

  • 30g (11/2 tbsp) butter










  • 2 1/2 tbsp plain flour










  • 500ml (2 cups) milk










  • 80g (1 cup) coarsely grated cheddar










  • Salt & ground white pepper

  • Brush the base and side of a 5cm-deep, round, 20cm (base diameter), heatproof microwave-safe dish with the melted butter to grease.





  • Place the extra butter in a medium microwave-safe bowl and heat, uncovered, on Medium-High/650watts/70% for 30-40 seconds or until melted. Add the breadcrumbs and parsley, and mix well.





  • Cut the cauliflower into medium, even-sized florets. Use a small sharp knife to cut a cross in the stems. Wash the cauliflower and arrange in a single layer in the greased dish, with the stems facing out and the flowers facing in. Cover with plastic wrap and cook on High/800watts/100% for 6 minutes or until almost tender. Remove from the microwave, cover with foil to keep warm and set aside.





  • To make the cheese sauce, place the butter in a large, heatproof microwave-safe jug or bowl, and heat, uncovered, on Medium-High/650watts/70% for 1-11/2 minutes or until the butter melts and is foaming. Add the flour and use a whisk to combine. Cook, uncovered, on High/800watts/100% for 30 seconds. Add the milk a little at a time, whisking constantly. Cook, uncovered, on High/800watts/100%, whisking every minute, for 4-6 minutes or until the sauce boils and thickens. Stir in the cheese. Taste and season with salt and pepper.





  • Preheat grill on medium-high. Pour the sauce over the cauliflower in the dish, then sprinkle with the breadcrumb mixture. Cook on Medium/500watts/50% for 4 minutes and then cook under preheated grill for 3-4 minutes or until the top is golden and the edges are bubbling. Serve immediately.
