This cake is wonderfully moist and a great way to use some seasonal apples. Traditionally this style of apple cake contains rum, but we’ve used milk instead - feel free to swap!

Ingredients:

  • 150g (1 cup) plain flour










  • 1 tsp baking powder










  • 125g butter, at room temperature, chopped










  • 100g (1/2 cup) caster sugar










  • 2 eggs










  • 1 tsp vanilla extract










  • 60ml (1/4 cup) milk (see note)










  • 3 large pink lady apples, peeled, cut into 2-3cm pieces










  • Icing sugar, to dust

  • Preheat oven to 180C/160C fan forced. Grease a 21cm springform pan and line the base with baking paper.





  • Sift the flour

    (150g (1 cup) plain flour)
    and baking powder (1 tsp baking powder) into a bowl. Use electric beaters to beat the butter (125g butter, at room temperature, chopped) and sugar (100g (1/2 cup) caster sugar) in a separate bowl until pale and creamy. Add the eggs (2 eggs), one at a time, beating well after each addition. Beat in the vanilla (1 tsp vanilla extract).





  • Fold the flour mixture and milk (60ml (1/4 cup) milk (see note)) into the butter mixture, then fold through the apple (3 large pink lady apples, peeled, cut into 2-3cm pieces). Transfer to prepared pan and smooth the surface. Bake for 35 to 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Set aside in the pan for 10 minutes, before transferring to a wire rack to cool completely.





  • Serve the cake dusted with icing sugar (Icing sugar, to dust).
