Melted butter, to grease
190g (1 1/4 cups) plain flour
2 tbsp icing sugar mixture
125g chilled butter, chopped
2 tbsp water
5 nectarines, halved, stone removed, cut into thin wedges
Icing sugar, to dust
Vanilla ice-cream, to serve
Filling
200g butter, at room temperature
155g (3/4 cup) caster sugar
1 tsp vanilla essence
3 eggs
100g (1 cup) almond meal
150g (1 cup) plain flour

Preparation steps:

Preheat oven to 180°C. Brush a 20 x 30cm (base measurement) lamington pan with melted butter to lightly grease. Line the base and 2 long sides with non-stick baking paper, allowing the sides to overhang.
Place the flour, icing sugar and butter in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. Add the water and process until the mixture just comes together. Spoon into the prepared pan, pressing evenly over the base. Place in the fridge for 20 minutes to rest. Bake in the oven for 15 minutes or until light golden. Set aside for 30 minutes to cool.
Meanwhile, to make the filling: use an electric beater to beat the butter, caster sugar and vanilla in a large bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition. Fold in the almond meal and flour.
Pour the filling over the pastry base in the pan. Arrange the nectarine in rows over the top and gently press into the filling. Bake in oven for 30 minutes or until golden. Set aside for 5 minutes to cool slightly. Cut into 8 pieces. Dust with icing sugar and top with vanilla ice-cream, and serve immediately.
