4 rashers middle bacon, rind removed, trimmed, chopped
1 medium leek, trimmed, halved, washed, thinly sliced
1 garlic clove, crushed
1 cup reduced-fat sour cream
1 cup grated reduced-fat tasty cheese

Preheat oven to 180°C/160°C fan-forced. Place potato in a saucepan of boiling, salted water over high heat. Cook for 10 to 12 minutes or until just tender. Drain.
Grease a 7cm-deep, 8 cup-capacity ovenproof dish. Combine potato, bacon, leek, garlic, sour cream and half the cheese in a bowl. Season with pepper. Transfer to prepared dish. Sprinkle over remaining cheese. Bake for 25 minutes or until potato is tender and cheese melted and golden. Serve.
