  • 30g butter










  • 1/4 cup caster sugar










  • 1 lemon rind, finely grated










  • 1 lime rind, finely grated










  • 2 tbsp plain flour










  • 1 cup milk, scalded, hot










  • 2 eggs, separated










  • 1 tbsp citrus juice










  • 2 egg whites, extra










  • Icing sugar, for dusting


  • White chocolate sauce










  • 1/2 cup thickened cream










  • 100g white chocolate, finely chopped










  • 1/2 lemon, finely grated zest









  • Select all ingredients

  • Preheat oven to 200C. Lightly grease 4 x 3/4-cup souffle dishes.





  • In a medium saucepan, combine butter, sugar and zest. Stir over medium heat until melted. Add flour, cook, stirring for 1 min. Remove from heat.





  • Whisk hot milk into butter mixture. Return to heat and cook, stirring, until mixture boils and thickens. Simmer for 1 min. Beat in yolks and juice. Allow to cool slightly.





  • In a clean bowl, beat egg whites until soft peaks form. Fold lightly into citrus mixture.





  • Spoon evenly into prepared dishes. Bake for 15-20 mins until puffed and golden.





  • Meanwhile, to make the white chocolate sauce, heat cream in a small saucepan on high. Remove and add chocolate and zest, stirring until melted.





  • Serve souffles dusted with icing sugar. Accompany with white chocolate sauce, for drizzling.
