  • 1 tbsp olive oil










  • 1 red onion, chopped










  • 2 zucchini, coarsely chopped










  • 2 yellow capsicum, seeded, coarsely chopped










  • 1 small eggplant, cut into 2cm pieces










  • 400g can crushed tomatoes










  • 2 sheets (25cm) frozen ready-rolled puff pastry










  • 100g goat's cheese, crumbled

  • Heat the oil in a large frying pan over high heat. Add the onion and cook, stirring, for 2-3 minutes or until the onion softens. Add the zucchini, capsicum and eggplant and cook, stirring occasionally, for 5 minutes or until tender. Add the tomato and cook, partially covered, stirring occasionally, for 10 minutes or until vegetables are tender and sauce thickens slightly. Remove from heat. Season with salt and pepper.





  • Preheat oven to 220°C. Line an oven tray with baking paper. Cut a pastry sheet into quarters. Cut the remaining pastry sheet into 1.5cm strips. Arrange the pastry strips around the edges of each pastry square and trim the edges. Place on the lined tray. Spoon the zucchini mixture among pastry squares and sprinkle with goat's cheese. Bake in preheated oven for 10-12 minutes or until pastry is puffed and golden. Remove from oven.





  • Place ratatouille tartlets on plates and serve immediately.
