4-5 garlic bulbs
1 lemon, halved
6 fresh thyme sprigs
4 fresh continental parsley sprigs
4 dried bay leaves
250ml (1 cup) white wine
250ml (1 cup) Massel chicken style liquid stock
80ml (1/3 cup) olive oil
French bread stick (baguette), sliced, to serve

Preheat oven to 200C. Pat chicken dry, inside and out, with paper towel. Separate cloves from 1 garlic bulb. Place the garlic cloves, lemon, thyme, parsley and bay leaves in the chicken cavity. Season. Use unwaxed kitchen string to tie legs together.
Halve the remaining garlic bulbs crossways. Place half the garlic bulbs in the base of a flameproof casserole dish. Place the chicken, breast side up, in the pan. Pour over the wine and stock. Top with the remaining garlic. Drizzle with oil and season. Cover and roast for 11/2 hours. Uncover. Roast for a further 25 minutes or until the chicken is golden and juices run clear when thigh is pierced with a skewer.
Transfer the chicken to a plate and reserve the pan juices. Cover chicken with foil and set aside for 15 minutes to rest. Strain the pan juices into a clean saucepan, reserving the garlic. Bring to the boil over high heat. Simmer for 2-3 minutes or until reduced by one-quarter. Serve the chicken with the pan juices, garlic and bread.
