This classic French dessert features the tartness of green apples and the smoothness of creamy yoghurt.

Ingredients:

  • 3 (about 610g) Granny Smith apples










  • 1 tsp finely grated orange rind










  • 1 tbsp fresh orange juice










  • 1 tbsp caster sugar










  • 350g (1 1/3 cups) thick Greek-style natural yoghurt










  • 100g (1/2 cup, firmly packed) brown sugar

  • Preheat grill on high. Quarter the apples and remove the cores. Thinly slice lengthways and place in a large frying pan with the orange rind, orange juice and caster sugar. Stir over medium heat for 5 minutes or until the apples soften slightly.





  • Divide the apple slices among four 250ml (1-cup) heatproof serving bowls. Top with the yoghurt and smooth the surface. Sprinkle the brown sugar evenly over the yoghurt. Place the dishes on a baking tray and cook under preheated grill for 2-3 minutes or until the sugar melts and caramelises. Serve immediately.
