  • 2 cups milk










  • 1/2 small brown onion, peeled










  • 1 fresh flat-leaf parsley sprig










  • 1 bay leaf










  • 2 whole peppercorns










  • 50g butter, chopped










  • 2 tbsp plain flour

  • Place milk, onion, parsley, bay leaf and peppercorns in a saucepan over medium heat. Cook, stirring, for 10 minutes or until almost simmering (don’t boil). Set aside for 10 minutes for flavours to infuse.





  • Strain milk mixture through a fine sieve into a large heatproof jug. Remove and discard onion, parsley, bay leaf and peppercorns.





  • Heat butter in a saucepan over medium heat for 2 minutes or until melted and foaming. Add flour. Cook, stirring with a wooden spoon, for 1 minute or until mixture bubbles. Remove pan from heat. Slowly add milk, 1/4 cup at a time, stirring constantly to prevent lumps forming.





  • Return pan to medium heat. Cook, stirring, for 5 minutes or until sauce boils and thickens. Remove pan from heat.
