Ingredients:

  • 250g NESTLÉ BAKERS' CHOICE Dark Choc Melts










  • 125g butter, chopped










  • 60ml (1/4 cup) orange juice










  • 2 tbsp finely grated orange rind










  • 4 eggs, separated










  • 100g (1/2 cup) caster sugar










  • 2 tsp vanilla bean paste










  • 155g (11/2 cups) almond meal










  • 2 tbsp caster sugar, extra










  • Candied orange slices, to decorate


  • Mousse










  • 125g NESTLÉ BAKERS' CHOICE Dark Choc Melts










  • 300ml ctn thickened cream










  • 2 tsp finely grated orange rind










  • 2 tsp vanilla bean paste










  • 1 egg white










  • 55g (1/4 cup) caster sugar









  • Select all ingredients









Preparation steps:

  • Preheat oven to 180°C. Grease and line a 22cm (base measurement) round springform pan.





  • Stir the chocolate, butter, orange juice and rind in a saucepan over low heat for 3-5 minutes or until melted. Cool for 10 minutes.





  • Use electric beaters to beat the egg yolks, sugar and vanilla in a bowl until thick and pale. Beat in the chocolate mixture and almond meal.





  • Use electric beaters to beat the egg whites and extra sugar in a clean, dry bowl until soft peaks form. Fold into chocolate mixture until just combined. Pour into pan. Bake for 45-50 minutes or until a skewer comes out clean. Cool completely in the pan.





  • To make the mousse, stir the chocolate and cream in a saucepan over low heat for 3-5 minutes or until smooth. Stir in the orange rind and vanilla. Pour into a bowl. Cover and chill for 1-2 hours.





  • Use electric beaters to beat the chocolate mixture until soft peaks form. Use electric beaters to beat egg white and sugar in a clean, dry bowl until soft peaks form. Fold into chocolate mousse mixture until just combined. Spread the mousse over the cake and smooth the surface. Cover and chill for 4 hours or until firm.





  • Transfer the cake to a plate and decorate with candied orange.
