300ml ctn pouring cream
270ml can coconut cream
1 vanilla bean, split lengthways
Pinch of ground cinnamon
6 egg yolks
70g (1/3 cup) caster sugar
125g punnet raspberries
125g punnet blueberries
2 tbsp caster sugar, extra

Preheat oven to 180°C. Heat the cream, coconut cream, vanilla bean and cinnamon in a saucepan over medium-low heat for 2-3 minutes or until the cream almost boils.
Meanwhile, whisk egg yolks and sugar in a large heatproof bowl until thick and pale.
Gradually whisk the cream mixture into the egg mixture. Place over a small saucepan of simmering water. Stir constantly with a wooden spoon for 10-15 minutes or until the mixture thickens and coats the back of the spoon.
Scrape the seeds from the vanilla bean into the custard. Discard the bean. Place 250ml (1-cup capacity) ovenproof ramekins or teacups in a baking dish. Divide the berries among the ramekins. Strain the custard into a jug and pour over berries. Pour boiling water into the baking dish to come halfway up the side of the ramekins. Bake for 15-20 minutes or until just set. Remove the ramekins from the baking dish. Set aside to cool. Place in the fridge for 4 hours or overnight to chill.
Sprinkle the custards with the extra sugar. Use a blowtorch to melt sugar until golden. Alternatively, preheat grill on high. Cook the custards under grill for 2 minutes or until sugar melts. Cool before serving.
