  • 2 large parsnips










  • 2 tbsp lemon juice










  • 1/2 cup (150g) mayonnaise










  • 1/4 cup (75g) creme fraiche










  • 2 tbsp finely chopped flat-leaf parsley










  • Shaved black truffle or truffle oil (optional – see notes)










  • Bayonne ham or prosciutto, to serve

  • Combine mayonnaise, creme fraiche, parsley and truffle, if using, then season.





  • Add the parsnip and toss to combine.
