2 tbsp olive oil
1 large brown onion, chopped
3 baby eggplant
200g button mushrooms
2 garlic cloves, crushed
1 x 400g can Italian diced tomatoes
125ml (1/2 cup) Massel chicken style liquid stock
Salt & freshly ground black pepper
4 (about 150g each) 2.5cm-thick trim lamb leg steaks
1/2 loaf crusty Italian-style bread, to serve

Preparation steps:

Heat 1 tablespoon of oil in a large saucepan over medium heat. Add onion and cook, uncovered, stirring occasionally, for 3 minutes or until soft.
Meanwhile, halve the zucchini and eggplant lengthways, and cut into 3cm-thick slices. Slice the mushrooms thickly.
Add the garlic to the pan and cook, stirring, for 30 seconds or until aromatic. Add the zucchini and eggplant, and stir well to combine. Add the mushrooms, tomatoes and stock, cover and bring to the boil over high heat. Reduce heat to medium-low and simmer, partially covered, stirring occasionally, for 10 minutes. Uncover and cook, stirring occasionally, for a further 10 minutes or until the vegetables are tender and the liquid reduces and thickens slightly. Taste and season with salt and pepper.
Meanwhile, heat the remaining oil in a large non-stick frying pan over medium-high heat. Add the lamb and cook for 6 minutes each side for medium or until cooked to your liking. Transfer to a plate, cover loosely with foil and set aside for 2 minutes to rest.
To serve, slice lamb and serve with the vegetables and crusty bread.
