Ingredients:

165g unsalted butter, softened
110g (1/2 cup) caster sugar
1/2 tsp orange flower water (see note)
125g plain flour
50g fine semolina
1 egg yolk, lightly beaten
100g flaked almonds
600g cherries, stems intact
2 tbsp aged balsamic vinegar
Ricotta cream
50g icing sugar
Finely grated zest of 1 orange

For galettes, using an electric mixer, beat 125g butter, 55g (1/4 cup) caster sugar and flower water until light and fluffy. Gradually beat in combined flour, semolina and 1/2 teaspoon salt until mixture just comes together. Form into a disc, wrap in plastic wrap and refrigerate for 30 minutes.
Roll out dough between well-floured sheets of baking paper until 3mm thick. Using an 8cm pastry cutter, cut out rounds, re-rolling pastry scraps to get 12 rounds. Place rounds on a baking paper-lined oven tray and refrigerate for 30 minutes.
Preheat oven to 180°C. Brush galettes with egg yolk, scatter with flaked almonds, then bake for 15 minutes or until pale golden. Cool on trays.
For ricotta cream, process ricotta, icing sugar and orange zest until smooth and the consistency of thick cream - thin with a little water if too thick. Refrigerate until needed.
When ready to serve, melt remaining 40g butter in a heavy-based frying pan over medium heat. Add cherries and cook for 5 minutes or until skins are just beginning to burst. Scatter with remaining caster sugar and cook until mixture caramelises. Add balsamic vinegar and 2 tablespoons water and stir to combine.
Serve the galettes sandwiched with ricotta cream and cherries, and drizzled with a little syrup.
